If only I'd known then what I know now - that you CAN have ooey, gooey, creamy-sweet chocolates with no guilt! And you can watch Gladiator doing it! Consider this my cautionary tale against giving in to the See's (or Nestle's, or Nabisco's, or our old pals B & J's) siren call - because if you have these six ingredients waiting in your cupboard, you won't need them!!!
These might take the current prize for the most-delicious, satisfying and lip-smackingly delicious candies I've ever eaten. For SURE your kids will love them, even picky eaters I'll bet. And they could not be simpler to make - kids will have a blast helping!
CHOCOLATE CARAMEL ALMOND BITES
however many organic Medjool dates you like
approx. 1/2 c organic roasted almonds
approx. 2 T toasted coconut shreds (optional)
For the dipping chocolate:
1/2 c melted coconut oil
1/4 - 1/3 c cocoa powder
1/4 - 1/3 c maple syrup
1/2 tsp vanilla

Pit the dates and insert two almonds, squishing the dates closed over the almonds
place the dates on a cookie sheet or plate and put them in the freezer for five minutes.
Meanwhile prepare your chocolate by mixing melted coconut oil with maple syrup, vanilla and cocoa powder until blended. You can adjust the sweetness with more or less syrup, and the chocolate intensity and thickness with more or less cocoa powder.
Chop a small amount of the almonds for garnish, put aside with toasted coconut if using.
Take the dates out of the freezer and dip each one in the chocolate, coating thoroughly. Put back in freezer for five minutes. Take out again and dip again, this time sprinkling a little chopped almonds and toasted coconut on top. Put back in freezer for five minutes, and VOILA! They are ready and fit for a queen! Or king!
