Hail the Portabello God

First of all, let me thank my sweet friends who have emailed about my last post, hoping Greg is better and everything is ok.  Not to worry! Greg is fine and everything is good. Summer is (finally) beautiful and we're making the most of it!
Now, I must share a most amazing, recent discovery. If there is heaven in food, this is it.  This dish is EASY, QUICK and one of the MOST DELICIOUS things you've ever eaten.  It's like Thanksgiving any day of the week.  Once you've tasted the sauce on these mushrooms, you will triple the amount you make the next time and put it on everything.  Even our 12 year-old begs for more.  Try it and please let me know what you think!

1/2 cup almonds
1/4 cup olive oil
1/4 cup Braggs
1/4 - 1/2 c water
2 tbsp balsamic vinegar
3 cloves garlic, roughly chopped
1 tsp dried rosemary
1 tsp dried oregano
4 large Portabello mushrooms, stems removed
1 medium onion, sliced

Prehat oven to 350 degrees.  In a blender or food processor, blend the almonds until powdered.  Add oil, Braggs, water, vinegar, garlic, rosemary, and oregano, and blend until well combined.  In a large baking dish, place the mushrooms upside down and top with onions.  Pour sauce over top and bake for 20 -25 minutes.  Makes 2-4 servings.

"Braggs" is a delicious sauce that can be found near the soy sauce in the market. It's tres bon.
