Peanut-Licious

Here is a DELECTABLE recipe for all you peanut sauce-lovers:

SPINACH TOFU WITH PEANUT SAUCE

Peanut Sauce:
1/2 c peanut butter
1/2 c hot water
1/2 c brown rice vinegar
2 T tamari sauce
1 T agave nectar (or honey)
1T molasses
1T chopped fresh cilantro
pinch of red pepper flakes

Spinach Tofu:
2 T olive oil
1 1/2 c chopped onion
1 package firm silken tofu
4 cloves garlic, chopped very fine
1 T finely chopped fresh ginger
1 bunch spinach washed and chopped
pepper/salt
16 oz package rice noodles

Mix together sauce ingredients in a medium-size bowl and set aside.

In a large skillet, heat the oil and saute the onion until soft, 3-4 minutes. Add the tofu and continue to cook for 2 to 3 minutes. Add the garlic and ginger and cook for 1 to 2 minutes. Add the spinach and cook until it is wilted. Add the peanut sauce and heat through. Season with salt and lots of pepper. Serve over the cooked noodles. Warning: It is so good you won't be able to stop eating it.
